Last month I did very well with not eating a lot of sweet low carb foods. However, I decided to get one more treat posted before Valentine's Day.

My husband usually buys me a stuffed animal with a small box of candyfor Valentine's. But, he knows I follow a low carb diet so I always give the candy away.

Why do special occasions have to be associated with sugary foods? I'd rather have a nice juicy grilled steak to celebrate a special day.

But, to be in line with a day to show appreciation to those you love, I gave in and made a few treats. I came up with this strawberry fluff dessert recipe to celebrate with minimal carbs.

As many of you know from reading my blog, I've been moving away from erythritol sweetener blends. Instead, I've been using concentrated stevia and monk fruit.

Since most people prefer the bulk sweeteners, I will continue to give the amount of sugar equivalent needed. But, I'm using zero total carb sugar replacements when possible.

Although many still completely subtract erythritol, it seems to have an effect on me so I always take it into consideration. Recently, I found out I'm sensitive to all corn products so that could be why.

I used a half teaspoon stevia drops and one fourth teaspoon monk fruit drops rather than a third cup of low carb sweetenerin the strawberry fluff dessert recipe. It is less sweet than if you use a erythritol blend.

It took me a while to get to the point where I am now with sweeteners. When making treats for others, I always use erythritol blends as most people need that extra sweetness.

I do recommend that you try backing off on sweeteners as you progress in eating low carb. You'll find that you get to a point where you don't enjoy sweets anymore.

And, a lot of people still see low carb as a temporary plan for weight loss. It's really a lifestyle choice for better health and wellness.

Why would anyone want to go back to eating the standard high carb low fat diet when it only leads to disease and weight gain? I don't even miss the foods I used to eat.

So, when I post recipes like this strawberry fluff dessert, I always suggest that people adjust the sweetness to taste. And, feel free to use whatever low carb sweetener you prefer.

To get the fluffiest result, I do recommend whipping the mixture with an electric mixer. You want it to be fluffy like a whipped mousse.

However, a good blender should be able to add volume as well. And, you can use any berries you wish. But, strawberries areone of the best low carb fruits.

Ingredients

  • 1 cup strawberries fresh or frozen
  • 1 ½ cup heavy cream
  • 8 ounces cream cheese
  • cup low carb sugar substitute adjust as desired (see note)
  • 1 teaspoon grass-fed gelatin unflavored
  • 2 tablespoons boiling water
  • 1 teaspoon cocoa powder
  • 2 tablespoon homemade low carb chocolate shavings or chopped
  • fresh mint for garnishing optional

Instructions

  • Wash strawberries with cold water. Separate leaves. Cut in half.

  • In a blender or mixing bowl, pour cream, strawberries, sweetener and cream cheese. Blend well, scraping the sides. Continue to blend.

  • In a cup with gelatin, add boiling water and stir until gelatin is completely dissolved.

  • Pour gelatin mixture slowly into strawberry mixture as you whip it together.

  • Transfer mixture to your serving glasses, leaving about ¼ inches space from the brim.

  • Refrigerate for 3 to 4 hours. If you’re in a hurry, place in the freezer for 45 minutes to 1 hour to chill.

  • Once chilled, sprinkle cocoa powder on top, add chocolate bits, garnish with fresh mint and fresh strawberries.

  • When serving for Valentine’s Day, add some heart-shaped homemade low carb chocolates.

Notes

I like to use ½ teaspoon SweetLeaf stevia drops and ¼ teaspoon Monk Fruit dropsfor the low carb sweetener.
