While decorating the Christmas tree this year, I wanted to sip on something a bit festive. Rather than reach for the hard liquor, I made a spiced gingerbread coffee recipe for one!

This little treat has a nice sweetened blend of ginger, cinnamon, and cloves.

I'll admit that I probably drink way too much coffee. Even though there are benefits like improved focus, caffeine really needs to be consumed in moderation.

I've been trying to make the change over to tea, but it doesn't have the same impact. So, I keep returning to my favorite cup of joe. It's always been a treat I look forward to every morning.

I usually just mix in a bit of keto coffee creamer but, occasionally, I'll add in spices like cinnamon or ginger. However, adding gingerbread spice is the preferred blend for the holiday season!

Ingredients

The ingredients are pretty simple - coffee, sweetener, and spices! Here's a bit more information about what I used, including any substitutions you can make.

Sweeteners

I used two different types of sweetener in this coffee - a liquid syrup and Sukrin gold. I found that the brown sugar substitute really mixes in well and gives it that deeper flavor, just like a traditional gingerbread cookie.

Cream

Every sweet coffee needs some type of cream. For mine, I used just a tiny amount of heavy cream and then topped it with whipped cream.

If you are lactose intolerant or don't consume dairy products, use a little bit of canned coconut cream instead.

Coffee

Since this isn't a latte, you don't have to use espresso or strong coffee - but you certainly can if you want. I just used a cup of my favorite brewed coffee. You can also whip up a batch of keto bulletproof coffee!

I used traditional gingerbread spices in my coffee - a combination of ginger, cinnamon, and cloves.

Tips

  • Before you add the coffee, mix the sweeteners and spices together in the mug to help everything mix together better.
  • Have fun with the garnishes! Add a cinnamon stick, or sprinkle some sugar-free chocolate shavings.
  • If you are topping with whipped cream, only fill your mug ¾ of the way to prevent it from spilling over the sides.

Instructions

This is a very simple and straightforward recipe. All the steps are in the printable recipe card - but here are a few tips to help you out.

Mix The Spices And Sweeteners

I just mixed up a spice blend with some low-carb sweeteners. You don't have to do this in a separate bowl - mix them together right in your coffee cup.

Pour Brewed Coffee

Then, I brewed a single cup of Starbucks French Roast coffee in my K-Cup brewer right into my mug of spices and sweeteners.

If you don't have a single-cup coffee maker, just pour some coffee from your carafe.

Add Toppings To Gingerbread Coffee

Finally, top it off with some keto whipped cream and cloves.

As you can see in my pictures, I should have used a larger mug - topping off the coffee with whipped cream caused some dripping over the sides.

It did kind of give the mug a cool striped candy cane type of look, though. However, no need to make a mess next time!

I enjoyed this low-carb spiced gingerbread coffee with a slice of gluten-free gingerbread. A great combination, right?

Single brewer machines like the Black & Decker Brew' N Go that use regular ground coffee are much cheaper and eco-friendly than the K-Cup machine. They also allow much greater flexibility in the water amount used as well as the number of coffee grinds.

How can I change this recipe?

For another fantastic spiced coffee recipe, try making ginger coffee by leaving the cinnamon out. Or, you can use a low-carb ginger syrup with a dash of cinnamon and nutmeg.

What are the main spices in a gingerbread spice blend?

Although ginger and cinnamon are the primary spices, a gingerbread spice blend often contains:

  • Nutmeg
  • Cardamom
  • Cloves

I've added a dash of cloves to the top, but feel free to add in one or more of the other spices too.

  • 1 ½ teaspoons Sukrin Gold Fiber Syrup or sweetener of choice
  • ½ teaspoon Sukrin Gold or sweetener of choice
  • 1 tablespoon heavy cream

Notes

If the stated sweeteners are used, there's about 10.1g erythritol/fiber (from sweetener). However, any sweetener can be used, including pure monk fruit or stevia which will add no grams of carbs. Sweetener can be adjusted to taste, but on average, about 2 teaspoons sugar equivalence should be used.
