Mini Donuts with Vanilla Glaze {Recipe} (2024)

I've been meaning to post a donut recipe on here for some time but time always seems to get away from me, darn it you 24/7/365. Being that I made a bunch for Penelope's birthday partya few weeks back, it would seem that a recipe is finally going to happen, for reals yo.

A few years back my momma sent me out one of the best packages ever, why? Because the box included a sweet little set of donut pans! The best part about these pans is that you bake the donuts in the oven...love that! These little pans make every donut a healthy option and therefore okay to eat multiple in one sitting, holla! Okay not really but you can at least feel better eating them and baking them up as a little treat for your kids!

Vanilla Donuts (from my little paper insert in the donut pan, seriously every donut in the insert is delish!)

makes any two donut pans-large or small

2 cups flour

2 tbsp baking powder

1/2 tsp slat

1 cup sugar

1 cup milk

1 tsp vanilla extract

1 tbsp shortening

2 eggs

Preheat oven to 400 degrees. Grease donut pans and set aside. In a large bowl sift flour, baking powder and salt. Mix in the rest of the ingredients until combined. Fill donut recesses 1/2 full and bake for 10 minutes.

Vanilla Glaze

2 cups powdered sugar

2 tbsp corn syrup

2 tbsp milk

1 tsp vanilla

salt

Whisk together the powdered sugar and corn syrup, vanilla extract and a pinch of salt. Add in milk one tablespoon at a time until glaze is thin enough to dip donuts. Allow donuts to cool before applying the glaze.

Alright so grab your flour and baking powder and add it to the large bowl that you have pulled out of the 'ol cabinet.


Add in your sugar and salt. By the way, I hardly sift a thing...sorry dudes!


Pour in your milk, I like to use soy but you can use cow's milk. Does anyone else find that taste of milk gross? There is just something about it that grosses me out, I think it's the taste, cow's milk specifically. Like when I was little and would eat a rare dinner at a friend's house and their whole family would have these huge glasses of milk with their meal...ewww! I grew up in a water family, none of us were ever big milk drinkers. I just can't imagine drinking a whole glass of milk, and that milk mustache...oh nauseating! I do like the taste of soy milk a bit better though so if I ever have the urge to dunk my Oreos in milk I would choose that kind but in a very, and I mean very little cup, hah!


Okay, next add in your vanilla and shortening.


And two eggs...don't forget the eggs!


Mix it all up!


And pour it into your greased donut pans. Now if you don't have a donut pan you could easily swap in a mini muffin pan, the perfect substitute. If you want the 'donut look' just use a dowel or a straw and poke a hole in the middle when they are done baking. Also, the easiest way to fill these donut pans is by pouring the batter into a large resealable plastic bag and snipping off one corner, just the tip! Then just squeeze the batter around the donut pan's middle part. Now you don't have to waste any paper towels scraping off all the excess batter from the middle...not that I've done that or anything...


Bake at 400 degrees for about 10 minutes.

Okay, so once you have them on the rack to cool go ahead and make the glaze.

Let's get sugared up now shall we?

In a small bowl, add in your powdered sugar...


Then whisk in your corn syrup, vanilla and just a pinch of salt.

Add in the milk one tablespoon at a time until the glaze is slightly runny.


Now grab some colored sugar, sprinkles or other donut adornments and let's get to glazin' in three easy steps...the 3 D's if you will.


1. Dip


2. Drip


3. Dunk


Now that is one ridiculous looking mini donut.


Okay, so that one was for me. I went a bit lighter on the sugar sprinkles for the party. All the kids were under 5 and it was in the morning :-)
